Wining, Dining & Hospitality
The past few years have seen a surge in much-needed accommodation around Paso Robles, so we’re thrilled that The Ava Hotel will be joining us! With a rooftop pool, onsite dining options, and event space, The Ava Hotel will be a welcome addition for visitors staying in Paso Robles. This 4-story hotel is planned to open during the summer of 2025.
While the Paso Robles Inn is certainly not new – the historic Inn completed extensive renovations at the end of last year, unveiling 98 newly renovated rooms and suites, as well as the 1889 House, a 12-room “hotel-within-a-hotel” concept that honors the building’s Victorian history. With an elegant ballroom and a secluded garden, Paso Robles Inn offers a unique balance of history with modern amenities for elevated occasions. The Paso Robles Inn’s offerings ensure weddings, reunions, and business gatherings are luxurious and memorable.
We’re excited that S’Aranella is now open across from Downtown City Park! Created by Julien Asseo of the fabulous Les Petites Canailles, S’Aranella is a Spanish tapas bar and steakhouse slated to open in the beginning of the new year. Asseo’s creativity and attention detail ensures that his new venture will be a must for Paso dining. While exploring downtown dining, if you haven't already been to Parchetto, stop by this charming spot for food and drinks created by the owners of Il Cortile. Grace & Rose is also on the menu for 2025 — a new farm-to-table restaurant planned to open in this spring, set in a historic farmhouse, brought to you by the owners of Paso Robles Wine Merchant.
Don't skip the latest sips at Caliza Winery's new estate on Peachy Canyon Road and Vinyl Vineyards, where proprietors Jeff and Dina Hevert renovated six vintage airstream trailers to create a unique glamping experience with a new stage and music series debuting in 2025.
The Arts & Entertainment
Since it first opened in 2019, Sensorio has become a destination for locals and visitors alike. It’s an immersive experience unlike any other in which guests marvel at the light installations that blanket the slopes of Paso Robles. 2025 brings the newest Brunce Munro installment at Sensorio and it’s sure to be a marvel! Fibre Optic Symphonic Orchestra, or FOSO, will open April 11-13 and will feature 32 columns of light composed to an exclusive score by Nainita Desai. FOSO marks the 5th installment by Munro at Sensorio and is sure to solidify Paso Robles as an artistic haven.
In addition to Munro’s new installment, Sensorio recently launched Radiant Rhythms on Sunday evenings. This collaboration between Sensorio and Paso’s cherished Libretto jazz club provides music by world-renowned musicians with delicious food and drinks right in the heart of Sensorio. Radiant Rhythms in a welcome addition to Paso’s arts and entertainment landscape and we look forward to it returning for the 2025 season alongside the FOSO opening in April.
Outside of collaborations, Libretto has been busy cooking up new offerings as well. 2025 will bring inventive jazz, classical, and opera performers throughout the year. This cozy, intimate space almost feels like stepping back in time and is an absolute must for music lovers. Be sure to check Libretto’s calendar and book in advance.
Also on deck for 2025 is the Paso Robles Wine Festival. Wine is, after all, one of the top draws to the region so let’s celebrate nature’s elixir with a four-day extravaganza featuring seminars, food vendors, and a grand tasting. Taste all that Paso has to offer during this fabulous event in May. New this year is a special Friday Night Event taking place to kick start the weekend's festivities. If you can't wait until May, head to the coast in February to enjoy winemaker dinners, coastal excursions, a blending seminar and the BlendFest on the Coast Grand Tasting featuring 40 wineries. This annual event is a collaboration between Paso Robles Wine Country, Visit San Simeon, Visit Cambria and Highway 1 Road Trip.
Finally, 2025 brings the return of the California Mid-State Fair. Held every summer in Paso Robles, this twelve-day celebration is filled with carnival rides, agricultural exhibits, and some of the best live music in the world! It’s one of the most anticipated events of the year and 2025 will no doubt be spectacular.
No matter when you visit, end your evening with a stroll through the Downtown City Park lights. It's always hard to see the decorations come down after the holidays which is why the City of Paso Robles converted to a new, year-round light display that illuminates 21 trees, enhancing the charm of the Downtown City Park all year!
Outdoors, Agriculture & Adventure
Even with all of the creativity featured above, sometimes the most stunning experiences in Paso Robles are provided by Mother Nature. There are endless activities in the great outdoors here in Paso, and 2025 brings the Bovine Classic! This challenging gravel ride is rated one of the Top 10 by Bicycling Magazine, and October’s Classic will feature a cow-themed adventure that will be one for the history books. For the leisure cyclists, VineCycle Tours offers guided electric bike tours through Paso’s vineyards, providing an educational experience about local wineries and winemaking.
Since so much of Paso’s fantastic offerings revolve around agriculture, it’s fantastic that growers and producers here are one the forefront of sustainability. Tablas Creek in particular has been a vanguard of eco-friendly growing practices, the winery plans to extend their sustainability practices throughout 2025. For those traveling with family, savor summer with FARMstead ED's Open Farm Days in June. Explore the SLO County Farm Trail as over 20 local family farms across Paso Robles and SLO CAL offer farm tours, workshops, tastings and more! Come greet a pig, kiss an alpaca, milk a goat, meet the farmers and learn how your food gets from farm to table! If you're here in May, stock up on local goods at the Olive & Lavender Festival hosted in Downtown City Park.
