Paso Robles is a place where culture, tradition, and innovation thrive together. Each September and October, Hispanic Heritage Month offers the chance to honor the contributions of Hispanic and Latinx communities who continue to shape the region’s food, wine, and hospitality.

In Paso Robles, that influence can be felt across the tasting rooms, kitchens, and cocktail bars led by passionate makers and creators. From bold Spanish varietals to modern Mexican cuisine, here’s how you can spend a day celebrating Hispanic Heritage Month in Paso Robles.

Alchemist GardenThe Alchemists' Garden

The Alchemists’ Garden is the vision of Alexandra Pellot, whose career in hospitality began at just eighteen and has since spanned international bartending competitions, luxury hotels in Puerto Rico, and culinary internships in Europe. In 2015, she moved to Paso Robles, where she opened the bar at Allegretto Vineyard Resort and met her future husband and business partner, Andrew Brune. Together with friends Quin and Tony, they brought their dream of a destination cocktail bar to life, opening The Alchemists’ Garden in July 2020.

Launching in the middle of the pandemic was no small feat, but with community support and their own determination, they quickly built a space known for inventive cocktails, elevated cuisine, and warm hospitality. Today, Alexandra is recognized as a James Beard Advisor, a reflection of her role in shaping not only Paso’s cocktail culture but also the broader hospitality world.
