Gravesend Wine Merchant & Eatery Opens in Paso Robles, Introducing a New Destination for Boutique Wines, Elevated Cuisine and Collaborative Winemaker Experiences

Paso Robles, Calif. (November 4, 2025) - Gravesend Wine Merchant & Eatery, a new wine-focused restaurant and gathering place at the Paso Market Walk, has officially opened its doors. Co-owned by Keith Robinson and Matt Reese, Gravesend offers an inspired mix of boutique local wines, fresh seasonal fare and a warm, community-centered atmosphere.

At the helm of the kitchen is Chef Amy Baer, founder of the acclaimed culinary company Epicurean Santa Barbara and a former film composer whose career includes work on major productions by Martin Scorsese and Peter Jackson. Baer’s cinematic background informs her culinary perspective, weaving together storytelling, artistry and a deep sense of place into every dish she creates for Gravesend. 

“Our vision was to create a space where people can explore extraordinary wines, enjoy exceptional food that excites the senses and feel part of Paso Robles’ vibrant culture,” said Keith Robinson, Co-Owner and General Manager. “We’re excited to share a space where passion, craftsmanship and community come together.”

Matt Reese, Co-Owner, added, “Paso Robles has an incredible energy. With Gravesend, we wanted to build more than just a wine shop or restaurant. We wanted a hub where winemakers, chefs, locals and travelers can come together to connect and discover something new."

In addition to its curated selection of boutique wines from across the region, Gravesend is also the new home of Saint K Wines, the highly regarded label co-owned by Robinson and Reese. Guests can enjoy tasting flights and explore exclusive Saint K releases alongside other small-production wines by the glass, bottle and flights. 

As part of Gravesend's commitment to celebrating the people behind the wines, they will host ongoing Winemaker Wednesday collaborations throughout the year, bringing together local producers for one-night-only experiences that highlight the creativity and craft of Paso Robles’ wine community. During each collaboration, Chef Amy Baer will offer special bites inspired by the featured producer, while the full Gravesend menu will also be available for guests to enjoy.
