Il Cortile’s Chef Santos Creates Special “Reverse” Wine Dinners

Many people have experienced the traditional wine pairing dinner - the chef creates a delicious menu, which is complemented by a wine that enhances the meal’s flavor profile – but many people have not experienced a reverse wine dinner.
Now through March, Il Cortile Ristorante’s Chef Santos will be rethinking and reversing the traditional Chef’s table dinner. The ‘reverse’ aspect of the meal creatively asks guests to choose their wine first, with Chef Santos then creating a special three-course meal around the wine selection.
For nine straight weeks, a featured Paso Robles winery will bring a selection of their wines to the restaurant for guests to choose their perfect pairing. Once guests select their wine, Chef Santos will craft a unique three-course meal that complements the flavors and textures of their chosen bottle. The meal is $50 per person, plus the cost of the wine, which varies per winery.
